Acrylamide by QuEChERS Extraction with LC/MS/MS Detection

QuEChERS, an acronym for Quick, Easy, Cheap, Effective, Rugged and Safe, is a sample extraction and clean-up technique widely used for the analysis of multiple residues in hydrated agricultural products. Acrylamide, formed during cooking at high temperatures through the Maillard reaction of asparagine and reducing sugars, is a neurotoxin and classified as a probable human carcinogen and genotoxicant.
