Analysis of Anions, Organic Acids, and Cations in Wine by Capillary Zone Electrophoresis

In this application note the practical application of capillary electrophoresis technology for the analysis of ions in various commercial wine samples is demonstrated. The generation of anion, organic acid, and cation profiles is focused on and the simplicity of the technique as well as its capability to perform high resolution separations quickly and reproducibly is illustrated.
