Polycyclic aromatic hydrocarbons (PAHs) are found worldwide and emitted from a number of sources including fossil fuel, coal and shale oil derivatives, coke production and burning wood for home heating, generally arising from incomplete combustion. Food is considered an important source of human exposure, although smoking may provide a larger contribution for those who smoke. The European Union Water Directive restricts the amount of PAH in drinking water to less than 0.1 µg/L.
