Characterizing the Hydrothermal Behavior of Starch with Dynamic Mechanical Analysis

This application note explores the use of immersion-mode material pocket dynamic mechanical analysis (DMA) as a tool to investigate the structural changes associated with starch gelatinization. The experiment was carried out using the DMA 8000 instrument with the mechanically inert Material Pocket which allows straightforward, reproducible analysis of powders with DMA, which removes the difficulty in handling powdered and granular materials in mechanical tests.
