Comprehensive Analysis of Coffee Bean Extracts by GC×GC–TOF MS

This application note shows that BenchTOF time-of-flight mass spectrometers, in conjunction with GC×GC, provides a high-performance solution for screening for key aroma compounds in complex coffee extracts. There are almost 1000 compounds that have been identified in roast coffee extracts and the use of GCxGC-TOF MS permits an enhanced separation capacity. This allows analysts to screen the entire composition in a single analysis, with confident identification of compounds that would ordinarily co-elute.
