Determination of Arsenic Speciation in Apple Juice by HPLC/ICP-MS
25 Oct 2012Arsenic can exist in several forms, some of which are toxic and some of which are not. Arsenic in apple juice is an ongoing issue and it is important to be able to identify the different forms of arsenic that are present. In this application note from PerkinElmer a method whereby HPLC is used to separate different species of arsenic and inductively coupled plasma mass spectrometry (ICP-MS) is used to detect them is described. This method overcomes a common challenge with juice analysis whereby high levels of sugar can affect both the chromatography and ICP-MS.
