Identification of Off-Odours in Wine Using TargetView GC–MS Software

This Application Note shows how TargetView compound identification software can be used to rapidly and confidently identify volatile compounds in wine associated with the spoilage yeast Dekkera (Brettanomyces) bruxellensis (‘Brett’).
