Measurement of Residual Sugar in Wine

This application note explains a residual sugar assay involving enzymatic conversion of analytes to give NADPH as a by-product. By measuring absorbance at 340nm, the analytes in wine can be directly quantitated. Using Molecular Devices’ SpectraMax® Plus384 Microplate Reader and SoftMax® Pro Software allows data for enzymatic determination of residual sugar in wine to be collected and analyzed efficiently.
