Nuclear Magnetic Resonance Spectroscopy Applied to the Analysis of Unsaturated Fat Content in Seed Oils

This application note demonstrates that different chemical groups are clearly identifiable in the lower field of the 1H NMR spectrum and describes how this information can be used to analyse the fat component of oils derived from seeds.
