Polarimetric Determination of Sucrose in Wine

Sucrose is added to wine to increase its alcohol content, though sucrose does not naturally occur in grapes. During the fermentation process the amount of sucrose must be analyzed, the polarimeter from Anton Paar can determine the sucrose content in grapes and wine.
