Quantification of Trimethylamine N-Oxide and Biogenic Amines in Addition to Standard Cations in White Wine

Consumption of white wine with elevated amine concentrations can lead to headaches, so their levels must be monitored. This application note describes the protocol for the determination of the amines trimethylamine N-oxide, putrescine, cadaverine and histamine in wine using the Metrosep C 6 - 100/4.0 column and direct conductivity detection. The Metrosep C6 has superior resolution, allowing lower detection limits to be achieved.
