Although pesticides are widely used in agriculture to protect crops destined for human consumption, they are potentially toxic to humans and therefore their use is highly regulated and residues in food are monitored closely. Prof. Jana Hajšlová, Institute of Chemical Technology - Department of Food Chemistry and Analysis, Prague, is an expert in food chemistry and analysis with 25 years’ experience.
