Total Fat Determination in Pasta According to the Randall Method

Pasta is a common food product usually made from durum wheat flour, other ingredients have also been recorded including buckwheat, rice and maize. For nutritional purposes correct labeling on food is important and can impact health, therefore it is also important knowing the amount of different components. This application note uses the Randall method to determine the amount of fat in dried durum wheat pasta and then compare it to the amount shown on the label. The Randall method is an extraction method up to five times fast than the traditional Soxhlet extraction method.
