A Metabolomics Approach to Characterize Raw, Pasteurized and Ultra-High Temperature Milk using UPLC-QTOF-MS and Multivariate Data Analysis

This scientific poster shows how UPLC-QTOF-MS technology integrated with multivariate data analysis can sensitively detect metabolic differences affecting the nutritional quality of milk, following heat treatment. The metabolomics study of milk is challenging due to the complex mixture of metabolites. The combination of UPLC separation, QTOF-MS and informatics used in this study allows for accurate identification and quantification of a wide range of metabolites.
